We are quite serious about our cooking at home--we cook a LOT of Korean food which means a ton of chopping and thin-cutting of meat and vegetables--but full disclosure in that we are not professional chefs. So I debated for awhile whether or not we should invest in high quality knives but now I can say I'm extremely happy with this purchase--its made my own cooking at home more fun, easier, and we're actually able to do more with these knives. (I'll leave the same review for the 7 in. chef's knife we also purchased since its general enough to cover both)One of things you should know before the purchase is that these are single blade knives. In case some are not familiar with this, I'll put it briefly: most regular knives are double bladed which means the right and left side of knife are sharpened. With Kamikoto knives only the right side is sharpened. This means that you have more control of the cut and can perform better for more sophisticated cuts. For example, sushi, so considering that I cook Asian cuisine more often, this takes me to another level of cooking. With these knives, I can actually make my own sashimi at home and also cut veggies more thinly so it opens up more possibilities for us. This can take a little getting used to, however. But once you know the techniques, EVERYTHING becomes easier.Also, when I held the Kamikoto knives for the first time, I was thinking that they weigh in my hand really well. Bigger knives weighed lighter than I expected and the smaller one was heavier than I expected. The grips are good too. Not too sticky, and also with wet hands I can grip them well.Especially I am a big fan of the vegetable knife (others are great too, of course). To me, it's a perfect size. Since it has a single blade, the vegetables don't stick to the back much.I'd better wrap up here otherwise I can write it on and on. If you are a serious home cook or want to explore more serious techniques that can make your life and cuisine easier, I would definitely recommend these knives. That's why we put it as a full 5-star--even though we're quite picky, we couldn't find anything wrong with these.
