Legendary industrial designer Komin Yamada brings a new age of innovation to Global cutlery with Sai, unifying function and design, these distinctive Japanese knives combine revolutionary ergonomic handles with triple-layered steel blades that maintain their exceptionally sharp edges. The first new cutlery line produced by Global in more than 25 years, Sai blends the Japanese company's tradition of craftsmanship with modern technological advancements. The knives combine three layers of steel: a core of patented, ultra-hard Cromova 18 Sanso stainless-steel alloy and two outer layers of more flexible 18/8 steel for added strength and resistance to rust. Professional-quality blades are ice-hardened and tempered to increase hardness, resist corrosion and maintain long-lasting sharpness. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who like hefty knives, its original knives--of which this one is an example--have thinner blades and are lighter than traditional European-style knives. This 10-inch chef's knife, however, is intended for large-handed cooks and is relatively heavy. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. The Global G-16 is an extremely versatile knife due to it's length, blade shape, and weight. It's very well balanced, the weight feels perfectly distributed.This is unquestionably one of the best knives you can get in this price range.This is my go-to knife for almost everything. It's excellent for chopping and slicing vegetables, herbs, greens, and meat.Due to it's thin blade profile and edge, the G-16 is not particularly great for extremely thick or hard things like butternut squash or chicken bones. For those tasks I prefer a thicker knife with more heft to it, or a cleaver.I have owned this knife for more than 3 years and have used it almost every day since I got it. I also own its little brother, the 8" G-2 Global G-2 - 8 inch, 20cm Chef's Knife, a great knife as well. I use the 10" G-16 much more often than the 8" G-2. I could do without the 8" knife, but not without this knife.If you are not a professional chef, this may be the last chef's knife you will ever need to buy. Sure you will need some smaller knives for specific purposes, but this knife will handle almost any job and with proper care the edge will stay razor sharp.This knife will brunoise an onion perfectly with ease, make quick work of a whole bundle of herbs such as parsley or rosemary, cut through large carrots like butter, and finely slice a tomato or anything else with precision.Take good care of your Global knives and they will last a lifetime.
