I've had the same Henkles knife set for 30 years, I thought it was fine, until I bought this one, what a difference! My husband has cut himself several times using this. It is sharp, and cuts thru everything.Sometimes we get used to using things, and it's easier than going out to find a replacement, but this knife is good, I'm so glad I did the research on reviews to get this one.This 5 inch Wusthof knife (actually measures 5.5 inch) was purchased to replace a slightly shorter (maybe 4-4 1//2 inch) Hoffritz knife which was at the end of its 35-40 year life. First, it is a little too long for me, but I may become accustomed to this length with use. What I was not prepared for is that it cuts on a slant when used on raw vegetables such as red new potatoes and carrots. I did not notice it doing this when cutting on raw celery. I am right handed and the slant is towards the left. The only difference I can see when comparing this new 5.5" blade to my old Wusthof 3.5" knife is that the notches which are placed on one side of each blade are wider and longer on the 5.5" knife (and start further from the end). I do not see how the last factor has any effect on cutting soup vegetables, though, and the knife edge is sharp enough to leave cutting ridges on my recently purchased OXO Good Grips Everyday Cutting Board (purchased Sept '20).This knife is a miracle! Impeccable quality. Have used it to cut bread, slice cheese, slice tomatoes, peel the rind off of fruits; it does it all easily. This is the only brand of knife that I buy.Oh my gosh this knife is unbelievable. In all my years of cooking, I have never had a knife cut with such precision quickness and sheerness. It is worth spending a few extra bucks for a good quality knife as I have been buying cheep knives from Pampered Chef to Bed Bath & Beyond and not getting the chops and cuts in my food that I am getting with this knife. The Wustof Classic was highly recommended by chefs and cutlery employees as one of the top brands they use in their work. Fantastic purchase and I rarely write reviews but this one is product is top rated.I bought this same knife in the 1980s and the blade snapped in two when my daughter accidentally dropped it on the floor. And I immediately bought it again because I loved it. I use it solely as a tomato knife, which is why I gave it a 4 for versatility. Due to its serrated edge, I'm not sure how it would be sharpened. But Wusthof and Henckel's are the best. Nothing like German steel and design.I use this knife for most everything -- cutting vegetables, bread, etc.For a long time I've had a longer bread/carving knife from the TV and market spots, that "can cut through cans" and "never need sharpening" and in all fairness to this brand, I have a 10 year old Ginsu that still is excellent for bread and joints. I also bought a newer set with 4 additional knives, all with the newer sharper more blade cut (which I'm not convinced are a better cut).So that was my experience, albeit good, with serrated knives until this Wursthoff beast hit my chopping board.All my chefs knives are Wusthoff, and I think they are excellent, but nothing prepared me for how sharp this serrated knife is.It's like 20X sharper than the Ginso serrated blades. It glides through tomatoes like nothing else I've used. Try this and you won't be disappointed,Mine arrived today and I immediately sliced some tomatoes and hulled 2 pounds of strawberries that were waiting for this knife. My Gawd this knife is sharp. I have both Wusthof Classic and Zwilling/Henckels knives and while I much prefer the hefty handle of Zwilling products (large hands), this blade is so amazing that I don't regret the purchase. So glad I didn't buy the 3 1/2" serrated paring knife, which was the original plan, and got the 5" utility instead.This is perfect knife, made where ALL Wusthof knives should be made: IN Germany, AT Solingen. This more and more rare today. The blade is thin and flexible as it should and is 14cm long. Very sharp and high RC. Grips are hard and the rivets are in stainless steel. But I would still not put this jewel in a dishwasher. Grips is more for a small hand, thin and well polished but the bolster prevents the hand to slip. This was the discontinued model, with older style markings and a lower price.Mittlerweile habe ich ein komplettes Messerset der Serie Wüsthof Classic (Koch-, Schinken-, Gemüse-, Spick-, Aufschnitt und Brotmesser). Der verwendete Stahl ist hochwertig, die Griffe gut verarbeitet und die Schneiden sind wirklich scharf geschliffen und haben bei entsprechender Behandlung lange Standzeiten (adäquate Schneidbretter, Handreinigung mit milden Putzmitteln, keine Aufbewahrung in der Wühlkiste, ab und an mit einem Wetzstahl abziehen). - Die Messer liegen gut in der Hand (d.h. sie sind gut ausbalanciert) und die geschwungenen Griffe geben guten Halt. Die Länge der Griffe variiert und ist proportional der Messerlänge unterschiedlich. Ich selber bevorzuge die größeren Messer (mit den größeren Griffen), meine Frau dagegen fühlt sich demgegenüber bei den kleineren Messern mit den etwas filigraneren Griffen sicherer aufgehoben - jedem das Seine! Ich kann die Messer ohne Einschränkung weiter empfehlen. - Das Aufschnittmesser mit seiner 14 cm lange Klinge ist ein besonders guter Küchenhelfer zum Schneiden von Wurst und auch für Tomaten gut geeigent. Die gewellte Schneide dieses Messers lässt sich allerdings wg. der Welle nicht nachschleifen. - Neben der Kaufempfehlung, die ich hier gerne für das Messer gebe, empfehle ich zumindest für Nichtprofis wie ich es bin, zusätzlich Wundpflaster und Heilsalbe! - Aber gut, inzwischen habe auch ich eine sichere Schneidtechnik entwickelt und alle Finger sind wieder verheilt ;-)))per tagliare salame anche molto stagionato, frutta, verdura, pane e addirittura i pomodori molto maturi risulta spettacolare. L'aspetto è esile con una altezza della lama piuttosto ridotta la quale risulta flessibile e non restituisce quel tipico senso di affidabilità e robustezza tedesca.........ma non lasciatevi ingannare dall'aspetto, dopo il primo utilizzo si intuisce la grandiosità dell'oggetto per lo scopo cui serve e la funzionalità che è al top.E' un Wusthof, quindi è realizzato con acciaio di qualità e ben rifinito. Il taglio è preciso e netto, perfetto per l'uso per cui l'ho acquistato (affettare salumi e prosciutto crudo). Spedizione senza problemi.Edizione classica, di ottima fattura. Coltello perfetto per tagliare verdure e salumi. La seghettatura prevede anche zone ricurve che consentono un distacco più facile della fetta.Insomma, oltre alla qualità del materiale, ci sono anche questi piccoli accorgimenti utili nell'uso quotidiano.
