Great addition to the kitchen knife set.perfect kmifeJust received the 6" Classic Chef Knife. It is smaller than the 8" Mercer Genesis Chef Knife that I normally use, but it is nicely proportioned. The package is opened and the tip is bend, plus two nicks on the cutting edge. There is a circular tip protector on it, which means the tip should not be bended. It looks like a floor display model from the seller at Brooklyn, New York. They should not send a knife that has bend tip with nicks on the edge. Anyway, I had honed it back close to normal shape. However, there are some minor rashes on the blade caused by my diamond steel during the honing process. I was a little upset for not getting a brand new merchandise.The craftsmanship, fit and finish on this knife are extremely high. The ergonomic is one notch above than my Mercer Genesis 8" Chef knife. It is more hefty than my Global Ni and Tojiro, but comparable to my Mercer. The blade material looks the same as my Mercer, and sharpness feel the same as my Mercer, Global, except the Tojiro F-701A, but still means very good. The Tojiro F-701A blade is sharp as razor, but that also means it is as thin as razor. I can not cut anything hard like chicken with bones or BBQ ribs, as the Wusthof, Mercer or Global. So, there are pluses and minors. I would say, I can use this Wusthof 6" knife daily as my Mercer without worrying the blade can be chipped like my Tojiro F-701A, like being able to hone those two nicks and crooked tip back to normal on this Wusthof 6" Chef Knife. Because once the blade is chipped, you have to re-profile the cutting edge which is pain in the rear.I cannot say how long the edge will stay to be sharp because I just got it. What I worry about is the full bolster when it comes to sharpening. Maybe I would have to get a file to shave the bolster down before I can sharpen it.TL;DR - It's a great knife. Sharpen it when you get it, and use it on a wooden cutting board.Full Review:I've been using Forever Sharp steak knives as my main cutting knives for many years. I spend so much time in the kitchen, I finally decided to get a good quality chef's knife. I read many articles from professional chefs and kitchen-tool testers, as well as reviews here on Amazon, and finally decided on the Wusthof Classic 6-inch Chef's Knife.I wasn't impressed with it at first. I thought "this doesn't really cut any better than my steak knives." But that's because it wasn't really pre-sharpened. So I took a blade sharpener to it and then it worked great! For about three slices.. and then it was dull again. Because I was using a glass cutting board. Given that I'd been using serrated steak knives for so long, I didn't realize just how terrible glass cutting boards are for good knives.So then I did a bunch of research on cutting boards. I'd been avoiding both plastic & wood for the same reason: they can get really gross, whereas glass comes totally clean. But after a lot of reading I learned that if you condition a wooden board properly, it actually has antimicrobial properties. So I got a wooden cutting board (also linked below).Now that I have sharpened the Wusthof knife and am using a wooden cutting board ... WOW! What a difference over my steak knives! They did as much tearing as they did cutting, but the Wusthof chef's knife slices cleanly and easily though everything I put in front of it. And its Classic line is its best line. And the Chef's Knife is its flagship knife. There is nothing but love possible for this knife. It is extremely sharp, extremely well-balanced, extremely easy to use and clean, and extremely beautiful. I know because my Wusthof Classic Chef's Knife I got back in 1996 and it's the single knife I use the most.This review is for one that I bought my youngest sister and her new husband as a wedding gift. Since they happen to have the same birthday, I'm planning on piecemealing them the entire set over coming birthdays and Christmases. This knife is exactly like the one I have, which for being 20-some years old still looks surprisingly identical, so much so that for a second I got them mixed up until I remembered I got the one for my sister monogrammed on the hilt and flipped them over to see.TWO PIECES OF ADVICE:1. Spend the bit extra and get the Classic instead of the Gourmet. Gourmet may sound fancier, but it's not. The Classic is made with a much higher grade of steel such that the knife doesn't nick even though its cutting edge is so fine, literally only atoms thick apparently, and that hardness translates into it staying sharp and hardly ever needing to be sharpened, but when sharpened, so little of the knife is ground away that mine after 20 years still looks like a new one. Maybe you've seen knives that get narrower and narrower as they age because of sharpening, but you won't see that with a Wusthof Classic, so some grandchild is going to get mine some day.2. Get the engraving. It's VERY cool and doesn't cost that much.not sure if this is a genuine one, did not arrive in the proper Wusthof packing and the logo on the handle is different to the other ones I have purchased recently?They need to update their photos. I was a little weirded out when I saw the different font. You can check the Wusthof website to verify it has changed.It's a good knife. It cuts stuff. If you want better you're probably looking at £200 Japanese knives with fancy patterns. Nothing wrong with them either.This is a long knife and can feel a little unwieldy because of that. If you need the extra length though it is extremely well balanced and a delight to use. Very useful for cutting large cabbages, big piles of herbs, etc., where a normal-sized knife just isn't quite long enough. This knife oozes quality :0)wow, it's a good one!really sharp, good sized blade, holds sharpness fairly long.worth every penny!bought 6'' sabateur previously for half the price but it's not even close to this one!Incredible build quality, this will probably outlast me. Amazingly sharp and really nice to hold. I keep looking around the kitchen for more things to chop now I've got this.
